As promised, this month is all about tacos! And a great start, an authentic tacos recipe from Mirna Arce –

There are uses that go beyond borders and foods that do it too. In these cases chefs are challenged to achieve original flavors. Now, what happens when the one away from home is you?

You took memories of aromas, flavors, textures, moments of happiness and pleasures on earth. But with time and a need to preserve your identity, you will need to recreate.

You will those aromas, that when you close your eyes you feel in your home country kitchen. Those exquisite flavors that you thought once were common but here and now, you realize they are unique, special, they taste and smell like your own land. For sure you will agree with me that eating an “American” style taco is totally different from eating a 100% Mexican one. Agree? It is one of those tacos that if you close your eyes you won’t know if you are Mexico of the U.S.

Speaking of tacos, the following dish originated in Mexico and it consists of a folded tortilla filled with different ingredients. The tacos are grouped according to their mode of preparation, type of its ingredients or the tradition of their home.

If we classify the types of tacos according to their preparation:

  • The tacos al vapor, are those made with small tortillas and fillings commonly
  • Mexican dishes that range from meat, potatoes, beans, ground beef, vegetables, pulled pork, or the unforgettable chile.
  • The tacos ahogados, are those tacos submerged in salsa.
  • The tacos dorados, are those with origin in Sinaloa, prepared with fresh tortillas that are stuffed with shredded beef, chicken, pork or beef, and then fried.
  • The tacos placeros are the most common and easy to make. They are filled with fresh cheese, avocado, nopales, chile and some meat.

As for the type of ingredients we can find tacos al carbon, al pastor, “de carnitas”, barbecue or roast beef and more.

Cities such as Veracruz, Yucatan and Baja California have their own special tacos thanks to the typical ingredients of each region. One of my favorite recipes is the Carne Asada tacos. You only need the following ingredients:

  • 2 lbs of beef
  • ½ cup of red chile
  • 1 teaspoon cumin.
  • 3 cloves garlic
  • 1 / 2 teaspoon salt
  • lime juice
  • 20 corn tortillas
  • 1 cup red onion
  • 1 cup fresh cilantro leaves
  • 1 / 2 cup of your favorite salsa

The preparation of this recipe is very simple. Mix the red chile, garlic, cumin and lime juice which will be added to the meat. Once the meat rests in the refrigerator for 30 minutes it will be ready to cook in the grill. You must heat the corn tortillas to fill them with meat, salsa, red onion, cilantro and sauce to taste.
